Ingredientes:

½ kg de mandioca

2 ovos

1 xícara (chá) de leite de coco

50g de coco ralado

1 xícara (chá) rasa de farinha de arroz

2 colheres (sopa) rasas de fécula de batata

1 colher (sopa) de manteiga

1colher (sopa) de fermento em pó

Modo de preparo:

Misture a mandioca ralada e metade de coco ralado (25g) em um recipiente a parte. No liquidificador, bater os ovos, o leite de coco, o restante do coco ralado, manteiga, adoçante, farinha de arroz e fécula de batata. Juntar essa mistura no recipiente da mandioca, mexer bem e colocar o fermento.

Assar em forno médio em uma assadeira pequena, untada com óleo e farina de arroz, por cerca de 25 minutos (em assadeira rasa, se for funda, cerca de 40 minutos). Para que o bolo não fique cremos, não deixe passar muito tempo no forno.
