Ingredientes:

2 espigas de milho (250G de grãos)

2 ovos

1 ½ xícara (chá) de leite de coco

¾ xícara (chá) de adoçante culinário em pó

1 colher (sopa) de manteiga

1 colher (sopa) de linhaça triturada

1 colher (sopa) de fermento químico em pó

Modo de preparo:

Bater todos os ingredientes no liquidificador. Untar uma assadeira com óleo e farinha de arroz e assar 180°C, por cerca de 25 minutos em assadeira rasa ou por 35 minutos em forma de pudim.

Truque: não deixar passar muito o tempo de forno para o bolo não ficar bem cremoso.
